Gefilte Fish

Gefilte fish (fish patties) is a dish from the Jewish community of Poland.

Ingredients
  

  • 3 lbs Whole buffalo carp, white fish, and pike, fillet and ground. Reserve the bones and heads.
  • 4 Onions
  • 4 Carrots
  • 1 Dill package
  • 4 Eggs
  • 5 tbsp Matzo meal
  • 3 tbsp Canola oil
  • 3 tbsp Sugar
  • 6 cups Water
  • 50 grams Almonds
  • Salt and Pepper to taste

Instructions
 

  • In a food processor grind 2 onions, then grind the almonds and add those to the ground fish. Add the eggs, the Canola oil, 1 tbsp of salt, 1 1/2 tbsp sugar, pepper to taste and the matzo meal. Mix thoroughly (add salt and pepper if necessary) let rest a while.
  • In a large saucepan add 6 cups of water the carrots dill the reserved bones and heads, 2 onions, 1 1/2 tbsp of sugar, salt and pepper to taste. Bring to a boil, and cook the broth for 10 minutes.
  • Wet your hands and form oblong fish patties, after each patty is form gently put it in the broth, keep going till all the patties are formed and added to the broth. When all the patties are in the broth let it boil then cover the saucepan and simmer for an hour, then uncover the lid and let it cook for 30 minutes longer.
  • After the fish is cooked removed each patty very carefully from broth put on a large plater, and decorate with sliced carrots. Let cool a while and refrigerate. Serve with red or white horseradish.

Gefilte fish is a dish from the Jewish community of Poland. This unique dish is served on high holidays, and is a delightful addition to any occasion. It taste best a day after being cooked, when all its juices and flavors have settled.
